Lecture at Nordic Coffee Fest: Sample Roasting in a Changing Coffee World

Coffee is facing big changes—rising prices, climate pressures, shifting trade rules, and evolving consumer tastes. In this talk, Tom Hopkinson, Head of Coffee and Customer Success at ROEST, will explore how sample roasting can play a bigger role in meeting these challenges. He’ll share how faster and more consistent roasting can improve decision-making across the supply chain—helping producers, buyers, and roasters support quality, adapt to uncertainty, and prepare for the future. Together, we’ll look at how sample roasting can move beyond being just a technical step to becoming a strategic tool for the next five years of coffee.

Tom Hopkinson is the Head of Coffee and Customer Success at ROEST, bringing over a decade of experience in roasting, education, and coffee strategy. He leads technical support and acts as Head of Coffee, shaping ROEST’s approach to innovation and quality. Currently also a writer and researcher for Barista Hustle, Tom’s coffee experience has spanned the coffee industry, including managing world-renowned cafés, coaching championship-winning baristas, and writing for global coffee publications. Starting his coffee career by opening his own café in London, and going on to apply his scientific background to all aspects of coffee roasting and brewing, Tom’s journey reflects a commitment to excellence and a passion for advancing the global coffee community.
