We’re excited to welcome Ian Fretheim, Director of Sensory Analysis, and Dylan Siemens, Head of Education at Cafe Imports, to the brew bar!

Ian and Dylan will be brewing the following coffees:

  • Women's Coffee Project - Idjwi Island - Kalehe - AA - Washed

    • The Cup: Strong savory with panela and burnt sugar flavors. Juicy acidity and sugary sweetness.

    • Organic Women Producers

    • Farm - Idjwi Island

    • Process - Fully Washed

    • Variety - Bourbon, Caturra, Catuai

    • Elevation - 1500-2000 MASL

    • Region - Idjwi Island, Kivu

  • Masha - Kayanza - Washed (Microlot)

    • The Cup: Dried apple, cooked green grape, lots of brown sugar, and fresh orange flavors with lots of tangy acidity and fruit-like sweetness.

    • Farm - Masha

    • Process - Washed

    • Variety - Bourbon

    • Elevation - 1672 MASL

    • Region - Gatara, Kayanza

    • Country - Burundi

    • Harvest - March– July

About Ian Fretheim

Ian Fretheim has been cupping and sample roasting coffee for Cafe Imports for 15 years. He’s led the company’s Sensory, QC, Roasting, and Sampling for 13 of those. He holds a certificate in sensory and consumer science from UC Davis and has studied wine assessment with the International Sommelier’s Guild. He’s introduced and implemented two high throughput - high detail, working cupping forms in this time.

Today, Ian and Cafe Imports use the second of those, the Coffee Rose, to describe and assess thousands of coffees, teach cupping and coffee tasting, communicate with partners, and provide a path for experienced cuppers to return to tasting coffee without the filter of forms that abstract them away from their cups and reduce their experience to a series of numbers and jam jar words.

About Dylan Siemens

Dylan Siemens is Head of Education at Cafe Imports and creator of its ED+U program. With nearly 15 years in specialty coffee as a barista, trainer, 2017 Brewers Cup champion, and educator, his passion is passionate about learning, teaching, and growing with others. Dylan is based in Arkansas with his wife and two young kids.
