We’re excited to welcome Robbie Melton, Director of Coffee at Pinewood Coffee Co, to the ROEST brew bar!
Robbie will be brewing the following coffees:
Kibaya (Rwanda): Kibaya comes from smallholder farmers near Kigali, Rwanda, and is processed at the Rwamatamu washing station. Grown at 1,600–2,000 MASL and composed entirely of Red Bourbon, this lot reflects the clarity, structure, and layered sweetness that define high-elevation Rwandan coffees. Rwamatamu is a family-run station built on steady improvement — working “petit a petit,” little by little — with a focus on quality, long-term relationships, and careful processing. That intentional approach shows clearly in the cup. Kibaya opens with jammy blackberry and plum, followed by golden raisin sweetness and soft vanilla. Hints of allspice add warmth and structure, while the finish remains clean and composed.
Mandarino (Colombia): Mandarino is a regional lot from South Huila, sourced from Maniwa Coffee, and built around the classic profile that has made this region one of Colombia’s most respected coffee-growing areas. Grown at 1,400–1,600 MASL and fully washed, this coffee comes from fertile mountains where coffee grows alongside mandarin orange trees, lending a familiar, fruit-forward character to the cup. Mandarino leads with rich chocolate sweetness, followed by soft mandarin orange acidity that brightens without sharpness. A creamy body carries the finish, giving the coffee a rounded and well-balanced feel.
Mutu Batak (Indonesia): From the highlands of Lintongnihuta in Sumatra, this wet-hulled coffee captures everything distinctive about the region while rising well above expectations. Grown between 1,000 and 1,400 meters above sea level by smallholder farmers, it opens with the comforting warmth of banana bread and butterscotch, followed by gentle tobacco and a syrupy, lingering finish. Familiar in character yet unexpectedly refined, it’s a reminder of how vibrant and expressive Sumatran coffee can be when handled with care.

His approach to roasting blends science and artistry, focusing on unlocking flavor while preserving each coffee’s character.
