Coffee Excellence Center (CEC) at Zurich University of Applied Sciences is a leading coffee research and education institution. They are involved in coffee science research projects along the whole coffee value chain with the main research approach by studying coffee though understanding chemistry and chemical composition of coffee. Coffee roasting is the part of the value chain where the biggest chemical and structure changes of the coffee occur. Because of this lab roasting is a crucial aspect of any study that involves a step of roasting coffee. ROEST is used at CEC for all sample and experimental lab roasting. The needs of CEC for coffee roasting are firstly consistent, reproducible roasts, with sensor data that ensures the repeatability of profile, and secondly, high flexibility in designing roasting profiles.
